January's Kitchen Contraption
This ceramic disc with a raised center filled with little “teeth” is a ginger grater. By
quickly pressing the fresh ginger root into the teeth and making a back and forth
motion, the often string flesh is pulverized and the ginger juice is collected in the
well surrounding the grating surface. This tool works best when fresh ginger juice
is desired rather than minced ginger.
